Start by adding your lime juice to a Ziplock bag, along with your olive oil, garlic and seasonings. Add your chicken and seal the bag, lightly squishing around to make sure all the surfaces of the chicken are thoroughly coated. Put in the fridge and marinate for at least 30 minutes. Note, the longer you let it sit, the more flavorful it is! Preheat your oven to 400F. And coat a baking dish with your olive oil. Add your marinated chicken in a single layer and sprinkle the rest of the marinade on top. Season with your salt and pepper. Bake for 30 to 40 minutes. Be sure to baste it halfway through baking. Add in some water and let it simmer for 1 to 2 minutes. Bring to a boil and reduce to a simmer. Add in your stock, cream and salt. Let simmer for 5 to 6 minutes. Cook the pasta according to the directions on the package. Combine your pasta with your chorizo mixture. Garnish with cheese. Serve and enjoy.
