Ingredients

  • 4 (1¼ lbs) 4 (550 g) green bell peppergreen bell peppers
  • 2 tbsp 2 tbsp olive oil, divided
  • 1 (4 oz.) 1 (110 g) yellow onion, finely choppedyellow onions, finely chopped
  • 2 2 garlic clove, finely choppedgarlic cloves, finely chopped
  • 1½ lbs 650 g ground beef or ground turkey
  • 2 tsp 2 tsp chili powder
  • 2 tsp 2 tsp ground cumin
  • 7 oz. (¾ cup) 200 g (200 ml) crushed tomatoes
  • salt and pepper
  • ½ lb (2 cups) 220 g (450 ml) cheddar cheese, shredded and divided
  • ½ cup 120 ml sour cream
  • 4 oz. (2 cups) 110 g (475 ml) leafy greens

Making low carb simple

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Preheat the oven to 400°F (200°C). Prepare a baking dish with parchment paper.

  2. Cut the peppers in half lengthwise and scoop out the seeds.

  3. Place the peppers in the baking dish, and drizzle half of the olive oil on top of the peppers.

  4. Heat the rest of the olive oil in a frying pan over medium heat. Add the onions and garlic and fry until soft.

  5. Add the ground beef and fry until no longer pink. Then add the chili, cumin, salt, pepper, and crushed tomatoes. Simmer for 5-10 minutes.

  6. Remove from heat and stir in half the cheese.

  7. Stuff the peppers with ground beef mixture, sprinkle the remaining cheese on top and place in oven.

  8. Bake for 20-25 minutes, or until the cheese has melted.

  9. Serve with a dollop of sour cream and leafy greens.

    Step 3 addresses the amount of time in the oven - just while you prepare the filling, or you can skip that step if you prefer a crunchier pepper.

    I've made these a couple times and they are very tasty, but I'm a lazy cook and don't like to cook things twice, so I just stuff the pepper halves with the raw meat mixture and bake longer and they turn out great (just a bit more "juice" in the casserole pan at the end). That way you don't have to pre-bake the peppers or brown the beef first!

    I made this last night, another tasty recipe. I placed the peppers in the oven for 10 mins before filling with the cooked mince. Surprisingly light meal but filling👍🏻

    I make them like Kristie does, without roasting the peppers or frying the meat beforehand. This gives you a bit of tasty broth in the casserole. I also reduce the carbs by using onion and garlic powder and leaving out the tomatoes. Then it qualifies as keto!
