How to buy fresh asparagus
- Ideally, look for grocery stores that store asparagus on ice or in cold water, this spears will be plump and not dry.
- Stalks should be plump and firm, and the tips should be tightly closed.
- Purchase shortly before eating, this is a vegetable that does not store well.
- Store asparagus at home in water or wrapped with a damp paper towel if possible.
- Large spears can be peeled with a vegetable peeler to avoid any potential woodiness.

This is what you need to make the casserole:
- Fresh asparagus
- Butter
- Onion
- Flour
- Salt and Pepper
- Sour Cream
- Swiss Cheese
- Panko Breadcrumbs
How to Make Easy Swiss Asparagus Casserole
Saute asparagus in butter for a few minutes.
Transfer asparagus from the skillet to a buttered baking dish.
Saute onion in butter until soft and translucent. Add salt, pepper, and flour. Cook for 1 minute.
Add sour cream and Swiss cheese. Cook over low heat until the cheese melts.
Pour mixture over the asparagus and spread to cover.
Mix melted butter with Panko breadcrumbs and sprinkle on top.
Bake at 400 degrees for 20 minutes.

Ingredients
- 6 tablespoons butter divided use
- 2 cups fresh asparagus cut diagonally in 1 1/2 inch slices
- 3/4 cup sliced onion
- 1 tablespoon flour
- salt and pepper to taste
- 1 cup sour cream
- 1 cup shredded Swiss cheese
- 1/4 cup Panko crumbs - cracker crumbs work well too
Instructions
Preheat oven to 400 degrees.
In a large saucepan over medium-high heat melt 2 tablespoons butter in large skillet. Saute asparagus for 2-3 minutes until barely tender. Remove from pan and set aside. I
In the same skillet, saute onion in 2 tablespoons butter until onion is soft and translucent. Stir in flour, salt, and pepper. Cook for 1 minute until flour is well blended.
Add sour cream and cheese to the sauce.
Cook, stirring constantly, over low heat until cheese melts.
Spoon asparagus into a buttered shallow baking dish. Top with cheese, onion and sour cream mixture. In a small skillet heat the remaining tablespoon of butter, and when it has melted toast the Panko crumbs for about 1 minute.
Bake at 400 degrees for 20 minutes. If the top is not brown, place under broiler for an additional minute or two.
