To make this recipe, you'll need several things from the produce aisle. Pick up red potatoes, red onion, scallions, Italian parsley, fresh dill, chives, lemon, and garlic. Step 1: Put potatoes in a pot and boil

Put the potatoes in a pot with 1 teaspoon salt and cover with water.Bring to a boil, then reduce heat to low and cook for 5 minutes or until the potatoes are tender.

In a small bowl combine the olive oil, vinegar, mustard, lemon juice crushed garlic, remaining salt, and pepper.

There are several ways you can customize the herbed potato salad based on your preference or what you have in the house. There are a couple of options on the potatoes if you want to swap those out. Yukon gold or fingerling potatoes will work. "I love working with these types of potatoes because the skin is very thin so there is no need to peel them. This is a huge time saver and I'm always on the look out for ways to cut corners. Russets don't work great here because they are a little crumbly, so I would avoid those," Hahn shares.

If you have other fresh herbs in mind, you can easily add more in or do some swapping. Cilantro, tarragon, oregano, or basil are all good choices. If you want to add other vegetables to the potato salad, it will add additional crispness and color. Consider cherry tomatoes, cucumbers, bell peppers, or blanched green beans for a fresh contrast. For a little heat, add some minced jalapeños, chopped pickled jalapeños, banana peppers, or red pepper flakes.

  • 12 chopped red potatoes
  • 2 teaspoons salt, divided
  • 2 tablespoons diced red onion
  • 2 chopped scallions
